Maui Maui Breakfast Muffins
Ingredients:

3 cups flour
1 1/2 cups sugar
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup COLAVITA Extra Virgin Olive Oil
3 eggs
1 can (8 ounce) crushed pineapple undrained
1 cup mashed banana
2 teaspoons vanilla
1/2 cup toasted chopped macadamia nuts


Preparation:


1. In a large bowl combine flour, sugar, baking soda, cinnamon, nutmeg and salt.2. In a separate bowl combine olive oil, eggs, undrained pineapple, banana, and vanilla. Stir into flour mixture just until blended. Batter will be lumpy. Fold in nuts. 3. Spoon into muffins cups that have been lightly oiled, filling 3/4 of the way full. Bake at 350 degrees for 20-25 minutes.Makes 18 muffins
