Apple Pie Molto Buono

"When I became a homemaker in 1962, I had difficulty making pie crust, so my mother suggested I use an oil-based pastry. However, she did not specify what kind of oil and I just assumed she meant olive oil, as that was the only cooking oil I had ever used. I have been usinig olive oil to bake with ever since. It really works."
Ingredients:

Olive Oil Crust:
2 cups all purpose flour
1/2 tsp. salt
1/2 cup COLAVITA EXTRA VIRGIN OLIVE OIL
4 Tbsp. cold water
1 Tbsp. cider vinegar
Pie Filling:
1/2 cup sugar
2 Tbsp. all purpose flour
1/8 tsp. salt
1/2 tsp. pumpkin pie spice (cinnamon is okay too)
4 cups sliced green tart apples (about 6 to 7 apples, peeled, cored and sliced)
2 ripe pears, peeled, cored and halved
1 Tbsp. fresh lemon juice
1 Tbsp. COLAVITA EXTRA VIRGIN OLIVE OIL


Preparation:


Olive Oil Crust:
1. Sift flour and salt into mixing bowl. 2. Pour Colavita Olive Oil, water and vinegar into measuring cup (do not stir). Add all at once to flour mixture and mix rapidly with a fork. Form into two balls, flatten slightly and roll between 2 sheets of waxed paper. (Tip: Sprinkle a few drops of water under bottom wax paper to keep in place while rolling out.)
Pie Filling:
1. Line 9-inch pie pan with pastry, refrigerate until used. 2. Mix sugar, flour, salt and pumpkin pie spice, add to apple slices and mix thoroughly. Set aside. 3. Crush pears and spread in bottom of pastry lined pan, sprinkle with lemon juice. 4. Heap apple mixture over pears, sprinkle with Colavita Extra Virgin Olive Oil. 5. Adjust top crust, seal and crimp edges, cut slits on top. 6. Bake in 350 degree oven for 45 minutes to an hour, or until apples are tender and crust is golden brown. 7. Serve while still warm with vanilla ice cream or whipped cream.
