Italian Sausage Soup with Tortellini
A one pot, one dish meal.  Some warm Italian bread completes the meal.

Ingredients:

1 pound Italian sausage, casings removed
1 tablespoon COLAVITA Extra Virgin Olive Oil
1 cup chopped onion
2 cloves garlic, sliced
4 medium tomatoes, peeled, seeded and diced (or 1 can diced tomatoes)
1 cup sliced carrot
5 cups beef broth, preferably reduced-sodium
1 cup tomato sauce
1/2 cup water
1/2 cup red wine
1 teaspoon dried basil
1/2 teaspoon dried oregano
8 ounces frozen tortellini (meat or cheese)
1 cup sliced zucchini
1 medium green pepper, 1/2 inch dice
3 tablespoons fresh parsley
Salt and freshly ground pepper, to taste
Parmesan cheese


Preparation:


In a large pot or Dutch oven, brown the sausage.  Remove and drain the fat.  Add oil; saute the onion and garlic until the onion is tender, about 5 minutes.  Return the sausage to the pot along with the tomatoes, carrots, broth, tomato sauce water, wine, oregano and basil.  Bring to a boil; reduce heat and simmer, uncovered 30 minutes.  Remove any fat that comes to the surface of the soup.  Add the tortellini, zucchini, green pepper and parsley.  Cover and simmer 35 - 40 minutes, or until the tortellini are tender. Taste and adjust seasonings.  Ladle soup into warmed bowls, top with a tablespoon of Parmesan cheese and serve.  Pass additional cheese, if desired.
