Delectable Papaya Pie

Ingredients:

Pie Crust:
2 cups all-purpose flour
1 1/2 teaspoons salt
1/2 cup COLAVITA Extra Virgin Olive Oil
1/4 cup cold milk
 
Papaya Filling:
3 1/2 cups sliced fresh papaya, peeled and seeded
1 cup sugar
3 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg


Preparation:


Pie Crust:
1. In a large bowl, combine the flour and salt. In a small bowl, mix together the olive oil and milk, pour into the flour mixture stirring with a fork until well combined.  Turn dough out onto a well floured work surface. Pat into a smooth ball, cut the ball into halves. Flatten each half slightly; then roll each into a 12-inch circle. (Due to the nature of the dough, it is best to roll out between two pieces of parchment or waxed paper). Place one into a 9" pie pan, leaving the excess dough to overhang.
Papaya Filling:
1. In a medium bowl, combine the papaya, sugar, flour, cinnamon and nutmeg.  Toss well to combine.  Spoon into the pie shell and cover with the top crust.  Fold the edges over to form a seal, cut off the excess dough and crimp or flute the edges.  Cut vent holes into the top crust to allow the steam to escape. 2. Bake in a preheated 425 degree F oven for 10 minutes.  Reduce heat to 350 degrees F and continue baking until the filling is bubbling and the crust is nicely browned, about 25 to 35 minutes more.  Allow to cool on a wire rack.  Makes a 9" pie.
