Olive and Bacon Bread

Radio Personality, Mike Colameco, shared with his listeners this recipe submitted to the Colavita Archive by a "Better than Butter" contest entrant. 

"I never thought to replace the butter in this old family favorite with olive oil until I was rummaging through my recipe box for ideas for your "Better than Butter" contest.  It's the perfect place! Try serving this with pimento cream cheese. Enjoy!"
Ingredients:

2 1/2 cups self-rising flour
1 tablespoon sugar
1 1/4 cup grated sharp cheddar
1 container COLAVITA Crushed Olives, sliced
8 slices bacon, cooked and crumbled
1/4 cup COLAVITA Extra Virgin Olive Oil
1 egg, beaten
1 cup milk
2 teaspoons mayonnaise
2 teaspoons Worcestershire sauce
1/2 teaspoon Dijon mustard


Preparation:


1. Preheat oven to 350 degrees. Oil a 9" loaf pan with olive oil. 2. In a large bowl, stir together the flour, sugar, cheddar, olives and bacon. 3. In a medium bowl, whisk together the oil, egg, milk, mayonnaise, Worcestershire and Dijon; stir into the flour mixture, mixing until just moistened. 5. Turn into prepared pan and bake 35 to 40 minutes or until bread tests done with a toothpick. Cool on a wire rack.  Makes 1 loaf.
