3 tablespoons COLAVITA Extra Virgin Olive Oil 1/2 cup chopped spring onion or scallions 1/2 cup cleaned and sliced leeks 1 pound cleaned and sliced white mushrooms or mixed mushrooms including white, shitake, oyster, and crimini 1 1/2 cups fresh, blanched or defrosted and drained frozen baby peas 2 cups canned, low-sodium chicken broth or chicken stock 1 1/2 cups fresh, diced plum tomatoes 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 2 tablespoons chopped Italian flat-leaf parsley 1 package Dal Raccolto Cavatelli or Capunti pasta, cooked according to package directions 1/2 cup freshly grated Parmigiano-Reggiano cheese
1. In a large skillet, heat olive oil over medium heat. Add onions and leeks, stirring, until onions are wilted, about 4 minutes. Add mushrooms and peas and continue to cook, stirring occasionally, until tender, about 5 minutes. Add stock, tomatoes, salt and pepper. Simmer until liquid is reduced by half, about 10 minutes. Add parsley. 2. Add the pasta to the sauce; stir until the pasta is coated and heated through. Remove from the heat and add grated cheese. Toss well and transfer to a warmed serving platter or individual bowls. Serve immediately.
