| Caramelized Onions |
| "These sweet-tasting onions are fabulous with baked chicken, mashed potatoes, liver, steak, pork chops and lots more. They are simple to prepare and will impress everyone who tastes them." |
Ingredients:
2 tablespoons unsalted butter 2 tablespoons COLAVITA Extra Virgin Olive Oil 1 teaspoon crushed juniper berries 4 to 6 medium Vidalia onions or other sweet onion, thinly sliced 3 tablespoons light brown sugar 2 tablespoons cognac

Preparation:
Melt butter with olive oil in a large skillet over medium heat. Add juniper berries and onions, cover, and cook about 8 minutes, stirring occasionally, or until onions are soft. Add a little water if onions are too dry. Add brown sugar and cook, stirring, about 5 minutes or until caramelized. Add cognac; heat until hot and carefully ignite. Let burn until flames burn out.
