Mushroom Pasta Scampi

 Using pre- sliced mushrooms and bottled chopped garlic from the produce department of your grocery store, makes this simple Dinner Done dinner even easier.

Ingredients:

3 tablespoons COLAVITA Extra Virgin Olive Oil
1 pound mushrooms, sliced
1 tablespoon chopped garlic
1 pound medium shrimp, peeled and deveined
10 ounces fresh spinach, torn
1/4 teaspoon crushed red pepper flakes, or to taste
1/4 cup grated Parmesan cheese
1 pound COLAVITA Linguine, cooked according to package directions, 1/2 cup cooking liquid reserved


Preparation:


Heat olive oil in a large skillet. Add mushrooms and garlic; cook and stir until tender and mushroom liquid is almost evaporated, about 5 minutes. Add shrimp; cover and cook until shrimp is almost cooked through, about 5 minutes. Stir in spinach and reserved 1/2 cup pasta water; cover and cook until spinach is wilted, about 1 minute. Place pasta in a bowl; stir in mushroom and shrimp mixture, Parmesan cheese and red pepper flakes; toss to combine. Season with salt, if desired.
