Fruit Boats
"Michael Jackson loved to eat with his hands so I created lots of finger foods. Salads are a bit of a challenge, but here's one that really works. It's great for parties, or for kids who will love the flavor, shape and taste."
Ingredients:

1 pear, peeled, halved and cored
1 peach, peeled, halved and pitted
1/2 ripe banana
1/2 cup fresh raspberries or strawberries
2 tablespoons cranberry juice
2 heads Belgian endive, cleaned and separated
4 ounces Gorgonzola cheese, crumbled
2 tablespoons chopped toasted walnuts


Preparation:


Combine all fruits and juice in a food processor or blender and process until pureed. Add more banana if mixture is too thin. Arrange endive on a large platter. Pour fruit mixture through a funnel into squeeze bottles, then squeeze onto each leaf. Sprinkle with cheese and walnuts.Makes 8 to 16 servings
