Egg Scramble Casserole
Super easy and tasty.  
Ingredients:

1 teaspoon COLAVITA Extra Virgin Olive Oil
1 bag O'Brien style frozen potatoes, thawed
1 cup shredded cheddar cheese
6 eggs
3 tablespoons heavy cream
1 teaspoon thyme
Salt and freshly ground pepper, to taste


Preparation:


Heat oven to 350 degrees F.  Lightly oil a 9 x 13 baking dish with olive oil. Spread the potatoes on the bottom, top with cheddar cheese.  Mix the eggs and cream together in a bowl, season with thyme, salt and pepper.  Pour over potatoes.  Place in oven and bake for 45 minutes, or until cooked through.  Make 6 servings.
