Potatoes Colavita
"Serve these at breakfast to replace traditional hash browns, or as a lunch or dinner accompaniment."
Ingredients:

1/8 cup COLAVITA Extra Virgin Olive Oil, or as needed
2 cups diced cooked potato
1/2 cup diced onion
1/2 cup diced red bell pepper
1 teaspoon minced garlic
1 teaspoon dried oregano
Salt and freshly ground pepper, to taste


Preparation:


Heat the oil in a large saute pan.  Add the potatoes, vegetables and seasonings; saute until browned and the vegetables are tender, adding additional oil as needed.  Makes 2 - 4 servings
