Double Onion-Crusted Pita Pizzas
Ingredients:

2 large onions
3 tablespoons COLAVITA Extra Virgin Olive Oil
1/3 cup marinara sauce
4 whole wheat pita breads
1 (2 1/4 ounce) can French-fried onions, crushed


Preparation:


1. Halve onions vertically, then slice 1/4". 2. Saute onions in olive oil over low heat until tender, about 10 minutes. Raise heat and cook until onions are golden and juices cooked away.3. Preheat broiler.4. Spread marinara sauce over pitas, to edges.5. Divide onion/olive oil mixture over sauce. Sprinkle with crushed fried onions. 6. Place pitas under broiler until onion edges are tinged with brown.7. Cut pitas in quarters and serve warm.Make 16 appetizers to serve 8
