Killer Potatoes
"I received this recipe from my grandma, who had lived in the country all of her life. It had never been written down until she passed it on to me. She got it from her mom. The original recipe called for a 1/2 pound of butter and 1 tablespoon of salt. (She also said that pork fat would work in a pinch!) I just could not give my 'only meat and potatoes' eating husband that much butter in one meal. I changed it to Colavita Extra Virgin cooking oil and added an extra clove of garlic. He still loves it and I feel better serving it to him."
Ingredients:

4 to 5 medium potatoes, washed and not peeled
1/2 cup COLAVITA Extra Virgin Olive Oil
Salt and pepper, to taste
1 medium red onion, diced
3 green onions, sliced thinly
2 cloves garlic, minced


Preparation:


1. Slice potatoes into 1/8 to 1/4 inch thick rounds. 2. Dip potato slices in olive oil and place in a small casserole dish. 3. Sprinkle potatoes with salt and pepper. 4. Mix onions and garlic in a small bowl and sprinkle over the potatoes. 5. Pour the rest of the oil over the potatoes. 6. Bake in a 375 degree oven for 20-30 minutes or until potatoes are cooked through. Makes 4 - 6 Servings
