Sliced Tomatoes with Mozzarella and Basil
Serves:6
Take advantage of summer vine-ripened tomatoes and my favorite herb, fresh basil.
Ingredients:

3 ripe tomatoes, thinly sliced
Handful of fresh basil leaves
1/2 pound freshly made mozzarella, thinly sliced
1/4 cup COLAVITA Extra Virgin Olive Oil
1 tablespoon capers
Freshly ground pepper to taste


Preparation:


Arrange alternate layers of tomatoes, whole basil leaves, and cheese on serving plate. Drizzle with olive oil, and sprinkle on the capers and top off with a few turns of the pepper mill.
