| Old Kentucky Home Biscuits |
| In this recipe it is best to process the dough in a food processor. But if you don't have one, the results are still delicious. However you beat the batter, resist temptation to beat the batter smooth. Lumpy batter, just barely mixed, leads to flaky results. We've tried this recipe using buttermilk instead of evaporated milk, and it works well, provided you like the taste of buttermilk! |
Ingredients:
2 1/2 cups all-purpose flour 1 tablespoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 4 tablespoons COLAVITA Extra Virgin Olive Oil 1 cup evaporated skim milk or buttermilk

Preparation:
Preheat oven to 425 degrees. In a large bowl, mix together the dry ingredients (flour, baking powder, baking soda and salt), and make a well in the center. In a separate bowl, stir together the wet ingredients (olive oil and evaporated milk). Pour the wet ingredients into the well, and stir until the mixture has a doughy consistency. Remove the dough from a bowl, and knead briefly on a lightly floured surface. Using a rolling pin, flatten the dough evenly into a piece 1-inch thick. Using a 2-inch round cutter, the dough should make about 16 biscuits. Bake until lightly browned (about 10 minutes) on a non-stick baking sheet. Best served fresh from the oven. Makes about 16 biscuits. Per Biscuit: 114 Calories; 4g Fat (1g Sat, 3g Mono, trace Poly); 3g Protein; 17g Carbohydrate; 1g Dietary Fiber; 1mg Cholesterol; 255mg Sodium.
