Strufoli/Pignolata (Baked in the Oven)
Origin: Italian
Ingredients:

DOUGH:
3 1/2 - 4 cups flour
1 1/2 tsp. baking powder
14 cup sugar
1/4 tsp. salt
4 eggs, beaten
1/2 cup oil
1 tsp. vanilla
HONEY COATING:
1/2 -3/4 cup honey, warmed
Colored sprinkles
1/4 cup citron, diced


Preparation:


Mix 3 1/2 cups of flour, baking powder, sugar and salt. Mix eggs, oil and vanilla. Add eggs to flour and work into a dough. Knead about 5 minutes or until smooth. Add more flour if needed. Cut off a piece of dough and roll into a rope about 1/2" round. Cut into 1" pieces. Put pieces of dough onto greased baking sheets. Bake in preheated oven 350 degrees until Struffoli are lightly browned. Warm honey, add citron and pour over cooled Struffoli. Decorate with colored sprinkles.
