| Brodetto all' Anconetana (Soup w/ Clams & Mussels) |

Ingredients:
3 tablespoons COLAVITA Extra Virgin Olive Oil 3 to 4 cloves garlic, minced 1 (28-ounce) can crushed tomatoes 2 tablespoon tomato paste 4 tablespoon chopped mint 2 dozen small clams, scrubbed 2 dozen mussels, scrubbed, beards removed 1 pound calamari, cleaned, body cut into 1 inch circles, tentacles saved separate 1 1/2 pounds firm white fish, bones removed and cut into serving sized pieces Salt and freshly ground pepper, to taste

Preparation:
Heat the oil over medium heat in a large Dutch oven; add the garlic and saute until just becoming fragrant. Add the crushed tomatoes, tomato paste and mint; simmer about 20 minutes. Add clams, mussels, calamari circles and tentacles; simmer gently for 10 - 15 minutes, or until shell fish opens and calamari are tender. Taste, season with salt and pepper. Lay fish gently on top, simmer an additional 5 - 8 minutes or until fish flakes. Spoon gently into warmed bowls.
