Garlic Basil Vinaigrette
This light dressing tastes so good, and at only 42 calories, is also good for your waistline.

Ingredients:

1/3 cup Rachael Ray low-salt Chicken Stock
2 tablespoons chopped fresh basil
1 tablespoon COLAVITA Extra Virgin Olive Oil
1 tablespoon fresh lemon juice
1 tablespoon COLAVITA Red Wine Vinegar
1 teaspoon Dijon Mustard
3 large garlic cloves
Salt and freshly ground pepper
1 bag mixed greens


Preparation:


Place all dressing ingredients into a blender, blend until smooth. Pour sparingly over the greens to lightly dress.  Store any unused dressing in the refrigerator for up to 1 week.
