| Burrata Caprese Salad |
| Burrata, an Italian delicacy is now available in many stores and specialty markets. This cheese has a mozzarella outside, with a creamy mixture of mozzarella and cream on the inside. It is a perfect way to "dress up" a Caprese salad. A drizzle of sweet aged balsamic makes it magnifico. |

Ingredients:
3 ripe tomatoes, preferably heirloom 1 (8-ounce) container fresh Burrata cheese, (2 balls, cut into halves) 1/4 cup chopped fresh basil COLAVITA Extra Virgin Olive Oil Salt and freshly ground pepper, to taste COLAVITA Balsamic of Modena Aged 25 years, or Balsamic Glace |
Preparation:
Slice the tomatoes and place over-lapping on a plate. Place the Burrata half along side. Sprinkle all with salt and freshly ground pepper, then with the basil. Drizzle with extra virgin olive oil and a small amount of aged balsamic. Makes 4 servings.
