Roasted Asparagus with Kumquats

My son used to eat kumquats just like candy.  Roasting them brings out their natural sweetness which pairs nicely with the asparagus.

Ingredients:

1 pound asparagus, trimmed and peeled if desired
10 - 15 kumquats, sliced
1 - 2 tablespoons COLAVITA Extra Virgin Olive Oil or COLAVITA Natural Orange Flavored Cooking Oil Blend
1 teaspoon minced fresh thyme
Salt and pepper, to taste


Preparation:


Heat oven to 450 degrees F.  Toss the asparagus and kumquat slices with the olive oil and spread on a rimmed cookie sheet.  Sprinkle the thyme over and season well with salt and freshly ground pepper.  Drizzle with additional oil and place in the hot oven for about 5 - 7 minutes, or until the asparagus are crisp tender and the kumquats are soft; shaking the pan once or twice during roasting.  Serve hot, warm or at room temperature.
