Deconstructed Caprese Salad
A delicious cross between bruschetta and a Caprese salad.

Ingredients:

1 pint cherry tomatoes cut into halves
1 cup fresh small mozzarella balls
1 cup fresh croutons, preferably made with Italian bread
1/2 cup fresh small basil leaves (if you can't find small enough leaves, cut large ones in half or into strips)
1/3 - 1/2 cup COLAVITA Extra Virgin Olive Oil
1 1/2 - 2 tablespoons COLAVITA Balsamic Vinegar
Salt and freshly ground pepper, to taste


Preparation:


Combine the tomatoes, mozzarella,  croutons and basil leaves in a bowl.  Mix together the olive oil and balsamic; pour over the salad, toss gently to mix.  Season with salt and pepper.  Makes 4 - 6 servings.
