Pasta Salad with Sun-Dried Tomatoes
Perfect picnic fare!

Ingredients:

1 pound COLAVITA Tubettini Pasta, or other small pasta
1 container COLAVITA Sun-Dried Tomatoes, sliced, 2 teaspoons oil reserved
1/2 container COLAVITA Crushed Olives, drained and coarsely chopped
6 green onions, thinly sliced
1/4 cup COLAVITA Extra Virgin Olive Oil
4 teaspoons COLAVITA Red Wine Vinegar
Salt and pepper, to taste
1/3 cup chopped parsley, or to taste


Preparation:


Bring a large pot of salted water to a boil; add the pasta and cook according to package directions.  When cooked, drain and run under cold water to stop the cooking process.  Shake to drain well.  Pour into a large bowl; add the sun-dried tomatoes, olives and green onions.  Stir to combine.  In a small bowl, whisk together the 2 teaspoons reserved sun-dried tomato oil, extra virgin olive oil, red wine vinegar and salt and pepper to taste.  Pour over salad; add parsley; mix well.  allow to sit at room temperature for 20 - 30 minutes to allow the flavors to blend.  Serves 10 - 12.
