Ingredients:
1 ripe avocado 1 tablespoon COLAVITA Fruttato Extra Virgin Olive Oil, or Extra Virgin Olive Oil Salt and pepper, to taste 2 ripe Roma tomatoes, thinly sliced 1 cup finely shredded iceberg lettuce 6 ounces prosciutto, thinly sliced 1 loaf Italian bread, thinly sliced and toasted in the oven until crisp Additional COLAVITA Fruttato Extra Virgin Olive Oil, to drizzle
Preparation:
In a small bowl, smash together the avocado with 1 tablespoon oil. Season with salt and pepper. Slice the prosciutto into ribbons; in a small saute pan, cook until crisp. Spread some of the avocado mixture onto the crostini, top with tomato slices, shredded iceberg and sprinkle with crisp prosciutto. Drizzle with additional oil and serve.
