Tagliatelle with Asparagus in Lemon Sauce

A light dish that is bright and refreshing.

Ingredients:

1 pound COLAVITA Tagliatelle Pasta
1 pound asparagus, trimmed, blanched and cut into bite sized pieces
3 tablespoons COLAVITA Limonolio, Lemon Infused Extra Virgin Olive Oil
1 tablespoon chopped shallots
1 teaspoon thinly sliced lemon peel
1 teaspoon fresh thyme, minced
1/2 lemon
Salt and pepper to taste

1 whole lemon, seeded and cut into small wedges


Preparation:


Cook pasta according to package directions.  While pasta cooks heat oil in skillet, add shallots and lemon peel; saute for a few minutes until shallots are soft; add thyme, a squeeze of lemon juice and the asparagus pieces.  When pasta is done; drain and add to pan; toss well.  Season with salt and freshly ground pepper. Serve with lemon wedges. Makes 4 - 6 Servings
