Watermelon, Arugula and Pine Nut Salad

 A light and refreshing salad, the sweet watermelon works so well with the peppery arugula.  Perfect in summer when watermelons are at their peak.

Ingredients:

1 tablespoon fresh lemon juice
1 tablespoon COLAVITA Red Wine Vinegar
2 tablespoons COLAVITA Extra Virgin Olive Oil
1/2 teaspoon salt (preferably Kosher)
3 cups seedless watermelon balls (or cubes)
6 cups baby arugula
1/4 cup toasted pine nuts
Freshly ground pepper, to taste


Preparation:


In a large bowl, whisk together the lemon juice, vinegar and salt.  Add the oil in a slow stream, whisking until emulsified.  Add the watermelon, arugula and pine nuts.  Toss to coat.  Taste and adjust seasonings.
