Ingredients:
1 1/4 cups all-purpose flour 1/4 cup cornmeal 1/2 teaspoon baking powder Pinch of salt 1/4 teaspoon nutmeg (optional) 1 1/4 cups 2% reduced-fat milk 5 large eggs, separated (reserve the 5 yolks and 2 of the egg whites separately) 4 ounces salami, cut in small pieces 3-4 tablespoons shredded sharp cheddar cheese COLAVITA Premium Canola-Olive Blended Oil, for frying
Preparation:
Combine the flour, cornmeal, baking powder, salt and nutmeg in a bowl. Add milk, egg yolks, salami and cheese; mix well. In a small bowl, whip 2 egg whites, gently fold into mixture. In a skilled add about 1 inch of oil, enough to allow fritters to float. Heat oil to 350 to 360 degrees and maintain that temperature throughout cooking. Add batter by the tablespoonful, dropping to form a small mound (about four or five mounds at a time). Fry on both sides until golden brown. When done frying the first batch, check one to make sure they are cooked through. If you can see uncooked batter in the middle, heat oven to 300 degrees F; place fritters on a baking sheet and place in oven until cooked through.
