Angel Hair Pasta Delight

To get this Dinner Done - cook the bacon in the microwave.  Cover a plate with a layer of paper towels, put the bacon on and cover with more paper towels.  Microwave about 1 minute per slice.  Or, for more convenience, look for pre-cooked bacon in the refrigerated section of your supermarket.


Serve this simple, yet tasty dish with a glass of Sutter Home Merlot.

Ingredients:

2 tablespoons COLAVITA Extra Virgin Olive Oil
1 1/2 cups chopped Vidalia or other sweet onion
3 cloves garlic, minced
1/4 cup water
1 (10-ounce) bag fresh spinach, chopped
2 cups chopped plum tomato
2 cups chopped cooked chicken breast (about 1/2 pound)
1/4 cup chopped cooked bacon (about 2 slices)
3 tablespoons COLAVITA Balsamic Vinegar
1 pound COLAVITA Angel Hair Pasta, cooked according to package directions and kept warm
1/4 cup (1 ounce) shredded Asiago cheese


Preparation:


1. Heat extra virgin olive oil in a large nonstick skillet over medium-high heat.  Add onion; saute 2 minutes.  Add garlic; saute 1 minute.  Add water and spinach; cover and cook 2 minutes or until spinach wilts.
2. Stir in tomato, chicken, bacon, and vinegar; cook 1 minute or until thoroughly heated.  Serve over pasta; sprinkle with cheese.  Serves 4 - 6
