Ingredients:
1 head iceberg lettuce, washed, dried and cut or torn into bite sized pieces 2 ripe avocados, peeled and thinly sliced 4 hard boiled eggs, cooled and sliced 4 plum tomatoes, sliced 1 small red onion, thinly sliced
Dressing: 1/4 cup COLAVITA White Balsamic Vinegar or Glace 1/2 fresh lime, squeezed 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon finely chopped onion, or shallot 1/2 cup COLAVITA Extra Virgin Olive Oil |
Preparation:
Place all salad ingredients in a large bowl. In a small bowl, whisk together vinegar and next four ingredients. Slowly add olive oil while still mixing until oil is incorporated into dressing. Allow to sit for about five minutes, then add to the salad, mixing gently so the avocado and egg do not break up too much.
