Scallops A La Kathie Lee
Serves:4
I named this dish in honor of Kathie Lee Gifford when we celebrated her birthday on "Live with Regis and Kathie Lee."
Ingredients:

1 pound scallops
1 medium onion, sliced
2 cloves garlic, chopped
1/4 cup COLAVITA Extra Virgin Olive Oil
2 tablespoons unsalted butter
4 to 6 ripe plum tomatoes, sliced
1/2 carrot, cut into thin julienne sticks
4 ounces COLAVITA Capellini (Angel Hair) pasta, broken into 1 inch pieces
1 tablespoon oyster or soy sauce
4 fresh basil leaves, torn or sliced
1/4 teaspoon dry mustard
Salt and freshly ground pepper to taste
1 tablespoon water


Preparation:


Rinse and dry the scallops. If using sea scallops, cut them into quarters. Saute the onion and garlic in the olive oil and butter until soft. Add the tomatoes, carrots, pasta and oyster or soy sauce. Season with the basil, mustard, salt and pepper.  Add the water; cover and let simmer 5 to 8 minutes. Place the scallops on top of the mixture and cook, covered, for another 4 to 5 minutes.
