| Virgin Islands Black Bean Soup |
| While soaking the beans overnight does help speed up the cooking process, you can easily make this soup without pre-soaking. Simply add about 1/2 hour to the cooking time. |
Ingredients:
3 tablespoons COLAVITA Extra Virgin Olive Oil 1/2 cup diced smoked ham 3 onions, 2 chopped and 1 peeled but left whole 3 garlic cloves, minced 1 pound dried black beans, washed 8 cups vegetable stock 6 cups water 1-2 bay leaves pinch dried thyme 1 whole dried chili pepper (optional) 1 tablespoon cumin powder 1 teaspoon ground allspice 3 tablespoons COLAVITA Balsamic Vinegar, or dry sherry Salt and freshly ground pepper Chopped cilantro, (optional)

Preparation:
Heat the olive oil in a stock pot. Add ham, chopped onions and garlic; saute over low heat for 5 minutes. Add the beans; stir to coat. Add stock, 6 cups water, whole onion, bay leaf, thyme, chili pepper, cumin and allspice. Bring soup to a boil, reduce heat and simmer uncovered, stirring occasionally, for 1 1/2 hours, or until beans are tender. Remove the whole onion, bay leaf and chili pepper. Stir in vinegar or sherry, and simmer 10-15 minutes more. Blend half the soup in a blender or food processor, return to the pot. If the soup seems too thick, add some additional vegetable broth or water. Taste and adjust seasonings. Serve garnished with cilantro, if desired. Serves 8.
