Mozzarella Salad

Ingredients:

Dressing:
1/2 cup COLAVITA Extra Virgin Olive Oil
4 tablespoons COLAVITA White Balsamic or White Wine Vinegar
3 cloves garlic, finely minced
3 tablespoons freshly grated parmesan cheese
1/2 tablespoon dried oregano leaves
Salt and pepper, to taste

Salad:
1 head iceberg lettuce, torn into pieces
2 cups pitted black olives, chopped
1 cup green olives with pimentos, sliced
10 plum tomatoes, sliced
2 cups shredded mozzarella cheese


Preparation:


Whisk all of the dressing ingredients together in a small bowl.  In a large salad bowl, combine the salad ingredients; pour dressing over, mix well to combine.
