Ingredients:
1 small rabbit (3 - 4 pounds), cut into pieces 2 tablespoons COLAVITA Extra Virgin Olive Oil Salt and pepper 1 large clove garlic, chopped 2 slices prosciutto or bacon 1 tablespoon chopped parsley 1 cup dry wine (red or white) 5 fresh tomatoes, peeled and seeded if desired, chopped 1/2 cup water, or more as needed

Preparation:
Place rabbit in a large frying pan with olive oil; sprinkle with salt and pepper; add garlic; brown slowly over medium - low heat. When browned, add prosciutto or bacon and parsley. Saute a few minutes; add wine and simmer until wine has evaporated. Add tomatoes and water, lower heat and cook slowly until meat is tender (about 1 hour) adding more water should it seem to dry.
