Caesar's Macaroni and Cheese
Serves:4
A delicious twist to an old favorite.
Ingredients:

1 box macaroni and cheese
4 tablespoons COLAVITA Extra Virgin Olive Oil
1/2 cup chopped onion
2 cloves garlic, minced
1/2 cup red bell pepper, diced
1/2 cup white wine
1/4 cup Kalamata olives, seeded and chopped
1 cup prosciutto, julienned
1/4 cup Parmesan cheese
2 tablespoons fresh  basil, chopped
1 sprig basil, for garnish (optional)


Preparation:


Cook the macaroni according to package directions; drain. While the macaroni cooks, in a small skillet, heat the olive oil over a medium heat; add the onions, garlic and red bell pepper.  Saute until softened.  Stir vegetables into the drained macaroni, add the wine, olives, prosciutto, Parmesan and cheese packet from macaroni and cheese box.  Simmer for two minutes, or until thickened and creamy.  If it seems too dry, add a small amount of water.  Stir in chopped basil.  Garnish with basil sprig (if desired) and serve.
