Mache Salad with Tomatoes and Balsamic Vinaigrette

A delicious summer salad.

Ingredients:

1 small shallot, finely minced
1 tablespoon COLAVITA Red Wine Vinegar
1 tablespoon COLAVITA Balsamic Vinegar
1/3 cup COLAVITA Extra Virgin Olive Oil
Sea salt and freshly ground black pepper, to taste
1 pound assorted heirloom tomatoes
4 ounces Epic Roots Mache, rinsed and well dried
2 ounces Parmesan cheese (not grated)


Preparation:


In a small bowl, whisk together the shallot, vinegars and olive oil; season with salt and pepper, to taste. Cut the tomatoes in halves or quarters (depending on size).  In a large bowl, toss the tomatoes with 1/3 of the vinaigrette.
Arrange an assortment of tomatoes on each plate.  Place the Mache in the same bowl and toss with the remaining vinaigrette; place on top of tomatoes.  Shave Parmesan cheese over each salad.  Taste and adjust seasonings.
