Spicy Tropical Eggs Benedict with Lemon Chive Hollandaise
Serves:4
Ingredients:

4 English muffins, split and lightly toasted
8 thin ham slices (about 4 ounces), warmed
1 papaya, peeled and thinly sliced
8 eggs, poached
Lemon Chive Hollandaise Sauce:
2 egg yolks
1/2 tablespoon fresh lemon juice
1/4 to 1/2 teaspoon hot pepper sauce
Salt and white pepper to taste
1/2 cup COLAVITA Extra Virgin Olive Oil, heated until hot
2 tablespoons sour cream
1 tablespoon snipped fresh chives
Additional fresh snipped chives for garnish, (optional)


Preparation:


1. On each muffin half place a slice of ham. 2. Fan papaya slices over ham, then add a poached egg. 3. Spoon Lemon Chive Hollandaise Sauce on top. 4. Garnish with additional chives, if desired.
To Prepare the Lemon Chive Hollandaise Sauce:
1. In the container of a blender, combine egg yolks, lemon juice, hot pepper sauce, salt, and white pepper; blend at high speed for 30 seconds. 2. With blender still running, pour heated olive oil in a steady stream until mixture is completely emulsified. 3. Transfer to a small bowl; stir in sour cream and chives. Blend well.
