| Sausage and Peppers al San Gennaro |
| Little Italy's Feast of San Gennaro, held every September, serves up serious New York City street food. Sausage and peppers prepared like this are a perennial favorite. Chef DeGeorgio suggests the following if you'd like to serve this dish at an outdoor barbecue: Prepare the recipe as outlined below through step 2. Then place the roasting pan over a hot charcoal fire, add the sausages and continue cooking until done as described in step 3. |

Ingredients:
16 large sweet or hot Italian sausages, with or without fennel seeds 4 each red, yellow and green bell peppers (about 1 3/4 lbs of each color), cored, seeded, and cut into 1/2 inch strips 3 tablespoons COLAVITA Extra Virgin Olive Oil 3 tablespoons COLAVITA Natural Garlic Cooking Oil Blend Salt and freshly ground black pepper 3 large onions, sliced about 1/2 inch thick

Preparation:
1. Poke each sausage several times with a fork. Preheat the broiler or prepare a charcoal fire in an outdoor grill. When hot, broil or grill the sausages, turning as necessary, until browned on all sides, about 8 minutes. Set aside. 2. Preheat the oven to 400 degrees F. Combine peppers and oils in a large (about 12 x 18 inch) heavy roasting pan. Season lightly with salt and pepper; toss to mix. Place roasting pan in the oven and bake until peppers are wilted, about 15 minutes. Add the onions, toss well and bake, stirring several times, until onions are softened, about 15 minutes more. 3. Add the sausages and continue roasting until the sausages are cooked through and the vegetables are tender, about 20 to 30 minutes. Season with additional salt and pepper as desired.
