Lemon Garlic Shrimp over Linguine
Serves:4
"The following is one of my family's favorite recipes, using Colavita Extra Virgin Olive Oil instead of butter."  Serve this easy dish with a green salad and some bread for a simple, delicious meal.
Ingredients:

24 medium shrimp, peeled and deveined
1 pound COLAVITA Linguine
6 tablespoons COLAVITA Extra Virgin Olive Oil
1 tablespoon Italian seasoning
1 to 2 cloves fresh garlic, minced
Salt, to taste
Lemon pepper, to taste (may substitute coarse ground black pepper)
2 tablespoons sesame seeds
1 fresh lemon

Preparation:

1. Bring a large pot of salted water to a boil, add the linguine. Boil until just before al dente; turn off the heat and leave the linguine in the hot water (this will finish the cooking). 2. Heat the olive oil in a large skillet over medium heat; add the shrimp. Cook for 2 minutes; add the garlic.  Gently toss the shrimp with the garlic until the shrimp turn pink; remove from heat. 3. Drain the pasta; add to the shrimp along with the Italian seasoning, sesame seeds, salt and pepper, to taste.  Squeeze the lemon juice over; toss well to combine.  Serve immediately.
