Pasta with Shrimp, Mushrooms and Sun-Dried Tomatoes
Serves:6
Ingredients:

1 package COLAVITA Spaghetti, Linguine or other pasta of choice, cooked according to package directions
1 pound shrimp, shells removed and deveined
2 tablespoons lemon juice
1 teaspoon fresh thyme, minced
1 teaspoon fresh rosemary, minced
1/4 teaspoon ground pepper
1/4 teaspoon salt
1/4 cup COLAVITA Extra Virgin Olive Oil
1/2 cup sliced red onion
2 tablespoons chopped shallot
1 tablespoon minced garlic
1/2 pound mushrooms, sliced
1/4 cup oil packed sun-dried tomatoes
Salt and pepper, to taste
Dash Italian seasonings
1 tablespoon chopped parsley
1/4 cup Parmesan cheese
Red pepper flakes


Preparation:


1. Combine the shrimp, lemon juice, thyme, rosemary, salt and pepper in a small bowl.  Toss together - set aside.
2. In a large saute pan over medium-high heat, heat the oil; add the onions, shallots and garlic, saute for 2 minutes.  Add the mushrooms and shrimp mixture; cook until shrimp turn pink, about 5 minutes.  Add the Italian seasonings; sun-dried tomatoes and a dash of salt and pepper, to taste. 
3. Add pasta and toss well to combine. 
4. Ladle into warmed bowls, top with parsley, Parmesan cheese and red pepper flakes.
