Extra virgin olive oil has rightly re-gained its preeminence in kitchens all over the world as the cooking oil of choice.

In many countries,  olive oil was displaced for a time as the favored cooking oil by industrially produced, flavorless  and inexpensive vegetables oils.  However, extra virgin olive oil is by far the best when it comes to taste and fragrance.   Olive oil is also very easy to digest. Extra virgin olive oil is a completely natural product, high in monounsaturated fat-- the "good fat" --  and is a source of antioxidants, making it a healthier alternative to butter, both as a condiment and in cooking. Nutritionists the world over are now recommending that consumers replace the other less healthy fats in their diets with extra virgin olive oil as part of a diet designed to help people live   healthier lives.  Other vegetable oils and margarine are often highly processed foods that can't compare to the goodness of extra virgin olive oil.
