All of us here at Colavita USA wish to thank everyone who entered our Better-Than-Butter Recipe Contest. We received an enormous variety of recipes spanning all of our categories. In this case, one might say a single recipe is worth a thousand words! And taken together, all of our entries do a great job of demonstrating the versatility of cooking with olive oil. That was one of our major goals in sponsoring this contest.

We also wanted to draw attention to the many health benefits associated with olive oil-especially when used in place of butter. Compared with olive oil, butter contains much higher levels of saturated fat, which has been shown to increase blood cholesterol-a condition strongly linked to heart disease. Our many winning recipes are delicious proof that you don't have to give up flavor to reduce cholesterol in cooking for yourself and your family when you rely on the rich, full taste of extra virgin olive oil.

We received more than 500 enticing recipe entries. With so many great dishes to choose from, selecting winners was a real challenge. Francis Anthony, the popular television chef known as the "The Love Chef ®" from Live with Regis and Kelly presided over the judging and worked together with the culinary team at Colavita to choose the finalists.

Over the years, Francis Anthony has taught hundreds of men, women, and children at his Cooking with Love International Cooking School in New York City, and has published three cookbooks: Cooking Pasta With Love, Cooking With Love Italian Style and Cooking With Love: The Love Chef Shows You How.

Our grand prize winner together with a companion will soon be heading for five dazzling nights in Rome. Each of our category First Place winners will receive a $250 American Express Gift Certificate. A one-year supply of COLAVITA Extra Virgin Olive Oil goes to the Second Place winners. And another 200 Third Place winners, not listed here, will soon be outfitted with the COLAVITA Chef Collection-including apron, oven gloves and our Cooking with Olive Oil American-Style! soft-cover cookbook.
